Start boiling your pasta waster (add a little salt) as you get the rest of the recipe ready. Add pasta and follow packet instructions once water is boiled. Then set aside once drained.
In your fry pan add your olive oil and garlic, cook until fragrant (about 1 minute) and add your cornflour. Sprinkle with salt and add your cup of almond milk. It will start to gain thickness as you stir it – then add to a blender.
Add half of your measured sundried tomatoes (oil drained), nutritional yeast and 1/4 cup of water and add to the blender with your garlic mix. Blend and set this aside.
In a pan add some oil olive, onion, the remaining sundried tomatoes – cook for 2 minutes. Add your broccoli, olives, yellow capsicum and spinach. Season with salt, pepper and chilli flakes to your taste.
Add your drained pasta back to your pot and adjust your stove to low heat. Add your sauce from the blender plus your vegetable mix onto the pasta and mix until the sauce is warm and mixed through.
Serve into your dishes, add extra salt and pepper to taste.
Tip: Add garlic bread to the side to complete the meal.
This meal goes well being reheated the next day after refrigeration.

1. Italian Bowl
We had to put this place at the top of our 5 places to find the best pasta in Sydney. The options are endless and we haven’t tried an option yet that hasn’t been delicious. You can basically pick any sauce on their menu (there’s a lot) and add any pasta of your choice to it. The kitchen is on display too so you can see all your meals come out fresh and piping hot! Make sure to add a slide of garlic bread, because what is a bowl of pasta without a slice.
2. Belmonte Italian Cuisine
For those in the Hills District of Sydney, you cannot go past Belmonte’s pasta dishes. Another huge menu with too many options to pick from, so there will be a dish for everyone. This place has a very old fashioned family feel to it and it shows in their meals. The portions are huge and the pricing is decent. We would recommend their marinara pasta, it’s huge and full of seafood!
3. Assembly Bar
If you’re in the CBD and stuck with the endless options of food places, Assembly Bar is a great option. They are underground and have quite a few pasta options, with vegan varieties available as well! If you go during the week they have some great deals on their dishes. Perfect for a work lunch or dinner and there is a bar on the side if you need a drink after a long day of work.
Another CBD option you need to try is Macchiato. This restaurant is huge and so is the menu! There are some mixed reviews online, however, the recent time we went (there was a group of 10 of us) no one had anything but compliments to say about the place. We tried everything from pasta, pizza and main meals! They also have a great bar here as well if you want to accompany your pasta with a nice glass of wine.
5. Verace Pizzeria
Last but not least is Verace Pizzeria in Macquarie Park. Another perfect place for a work lunch or weekend gathering. We tried their seafood pasta dish and it was fresh and delicious – there were also quite a few other pasta dishes to pick from. The dishes were the perfect size for us as well with a added slice of garlic bread haha!
